Herbed Lemon Sauce

This is a perfect compliment to grilled or sautéed fish.  You can use it as a marinade, or just brush some on before serving.  Magnificent!

¼ cup olive oil
1 tablespoon Herbes de Provence
2 cloves garlic, pressed
½ large lemon, juiced
½ teaspoon salt
½ teaspoon pepper

Combine all of the ingredients and whisk together.  Allow the sauce to sit in the fridge for a half hour to give the flavors time to fully develop.  Brush the sauce on the fish before grilling and again just before serving.
