Herbes de Provence

An herb mixture from the south of France, it generally combines sweet French herbs and lavender with herbs and fennel introduced by the Romans. The mixture commonly contains basil, fennel seed, lavender, marjoram, rosemary, tarragon, savory and thyme.  It is generally used to season beef, pork and poultry, but can wonderful with fish as well.
