Poblano Chiles

Poblanos are one of the most frequently used chiles in Mexican cooking, although the more popular form is the dried version, called Ancho.  The heat of a Poblano is somewhere the mild Anaheim and the medium hot Jalapeño.  Poblanos have an appearance similar to bell peppers, but with a redder or slightly purple color.  They are a delicious addition to any southwestern style recipe.
