Three Chiles

 

 

 

Anaheim Chile

These are among the most popular chiles, along with the New Mexican, Poblano and Jalapeño, used in southwestern and Tex-Mex cooking.  They are elongated and about six to ten inches long (imagine a bell pepper grabbed at the top and bottom and stretched.)

They are relatively mild and are almost always used by restaurants for making Chile Relaños, a popular dish where the chiles are stuffed with cheese and then baked or fried.  They are also the chiles used to make the canned "green chiles" found in the Mexican section of the supermarket.
