White Sauce (béchamel sauce)

The classic white sauce.  The basis for countless gourmet delights.

2 tablespoons butter
1 tablespoon flour
˝  teaspoon salt
1/8 teaspoon white pepper
1 cup whole milk

Melt butter in saucepan. Stir in the flour and seasonings smoothly. Add milk slowly. Cook and stir continually over moderate heat until boiling and cook to desired thickness.

For creamier sauce substitute light cream for the milk.
