White Chocolate Frosting I was digging in our spare freezer out in the garage recently when I came upon 3 large chucks of white chocolate each in a separate zip lock bag and weighing about a pound each. It took me a minute to recall that this chocolate had been lurking back there for ages - many years in fact - and less than that to figure out that I'd better start using it. Although it was fine and I'm not even sure it can go bad if its frozen like that. So I started thinking about where to start when I recalled that had been looking at my carrot cake recipe recently and thinking about the frosting which was made with white chocolate. Well that recipe also called for cream cheese and I didn't feel like a trip to the store. So I improvised with a box cake mix I had in the pantry and created this wonderful frosting to go on top. Not only was the result divine, but I still have almost all of the white chocolate left to work on more goodies :)
Using a double boiler (or an improvisation) slowly melt the chocolate. Remove from heat and allow to cool slightly. Meanwhile in the bowl of an electric mixer fitted with a paddle cream the butter and sugar. With the mixer on low gradually beat in the sugar until well combined. Add the salt, vanilla and sour cream and mix until very smooth. Add the melted chocolate and mix thoroughly. Mmmm...so good! Notes:
