Tortilla Stackup

These delicious quesadillas come compliments of Terri and Tommy Magee, my wonderful Florida cousins.

10-8" flour tortillas
10 ounces jack cheese, shredded
10 ounces sharp cheddar cheese, shredded
1¼ cups minced scallions, white and green parts
1 cup chopped green chilies or Jalapeños or a mix of both
2 tablespoons melted butter
sour cream and your favorite salsa

Toss the shredded cheeses to mix.

Coat 2-8" cake pans with cooking oil or butter.  Place one tortilla on the bottom of each cake pan.  Top the tortillas with a portion of the cheese and some of the onion and chiles.  Repeat this layering using remaining cheese, onion and chiles.

Brush the top of the stack with butter and bake in 400 degree oven for about 20 minutes or until the cheese has melted and the top is golden.

Garnish each stack with sour cream and salsa, cut into wedges and serve.
