Toasted Muffins with Crab and Bacon

Dear Wife has been making these for so long they get taken for granted, which is probably why it has taken me so long to get them into my cookbook.  They are so versatile.  It's so easy to adjust the toppings to suit your own tastes and everyone always love them. 

Use bacon, crabmeat, cheese, any combination of the above, or -- be creative!!!  These are so well suited to experimentation.  Enjoy! 

1 6-pack    Thomas' English muffins, split (see notes)
1 jar    Kraft's' Old English cheese spread - or the cheese spread of your choice (see notes)
8 Tablespoons (1 stick) unsalted butter
1½ teaspoons    mayonnaise
½ teaspoon    granulated garlic or garlic powder
about 6-8 ounces    tiny shrimp, crabmeat and/or an equivalent amount of crushed, crisp bacon

Mix the ingredients and spread evenly over the muffins.  Lay out on a foil covered baking sheet and broil 3-5 minutes or bake at 400 degrees for 15 minutes or until the muffins are toasted.

Cut each muffin half into quarters and serve immediately.

Notes:

  1. Don't be fooled, not all English muffins are the same.  It's worth it to spend a wee bit extra for Thomas's.
  2. This Old English Cheeses can sometimes be tricky to find.  It's usually displayed in the cracker isle of the grocery store.  If you don't see them ask for help,
