Thai Pork Meatballs

This recipe comes compliments of Carolina Vallejo, a nutritionist and home cook. These meatballs are somewhat sweeter than traditional beef meatballs with a distinctive hint of ginger.

Ingredients

2 tablespoons grated ginger
3 cloves garlic, finely minced
1 medium chile (Thai or Chile de Arbol), seeded and diced
2 fresh scallions, thinly sliced
1 tablespoon fish sauce
½ tablespoon kosher salt
½ tablespoon ground black pepper
1 cup plain bread crumbs
1 pound ground pork

Preheat oven to 425o and lightly grease a baking pan with cooking spray, or cover with parchment paper.  In a large bowl, combine all of the ingredients and mix well with your hands.  Lightly roll ¼ cup of the mixture into 12 meatballs making sure that you don't compress them too tightly as this makes them tough.  Arrange them onto the baking sheet and bake for 16 minutes until browned and cooked through.
