Mean's Thai Curry Peanut Sauce

"Mean Chef " is the cybername of the first rate chef that shared this recipe on a food discussion forum I frequent.  It is as delicious as it is simple to prepare.  Cutting back on the curry paste will reduce the heat but will also change the flavor.

1/3 cup   creamy peanut butter
1 cup   coconut milk
1 tablespoon   Thai red curry paste
1½ teaspoon   brown sugar
½ teaspoon   minced garlic

Whisk all ingredients over low heat until blended.    Allow to cool before serving.

 

Mark's Thai Peanut Sauce

This comes from a dear family friend.  He developed this recipe while working at a restaurant in Sarasota, New York.

¾ cup peanut butter
¾ cup boiling water
2 tablespoons sugar or maple syrup
2 tablespoons soy sauce
½ teaspoon crushed red pepper
3 cloves garlic minced
½" fresh ginger root, minced
1 teaspoon cilantro
1 teaspoon vinegar

Whisk the peanut butter and boiling water until thoroughly mixed. Add remaining ingredients, combine thoroughly and allow to chill in the fridge.
