Roasted Potatoes with Caramelized Vidalia Onions Caramelizing onions transforms them into an entirely different food.
Taste-wise, at least! Even strong onions become sweet and delicious.
Combining them with spices and roasted potatoes
guarantees a side dish that will dazzle your family and friends.
While the potatoes are roasting heat the oil over medium heat. Add the onions
and sauté, stirring occasionally, until they have turned are a deep golden brown
- about 25 minutes. Stir in the cumin and cayenne and cook an additional minute to allow
the spices to become fragrant. |
