Roasted Potatoes with Caramelized Vidalia Onions

Caramelizing onions transforms them into an entirely different food.  Taste-wise, at least!  Even strong onions become sweet and delicious.  Combining them with spices and roasted potatoes guarantees a side dish that will dazzle your family and friends.

1 recipe   Rosemary Roasted Potatoes
2-3 large    Vidalia onions (or other sweet onion), thinly sliced
2 tablespoons  olive oil, divided
1 teaspoon    ground cumin
˝ teaspoon    cayenne
2 tablespoons    fresh lime juice

While the potatoes are roasting heat the oil over medium heat. Add the onions and sauté, stirring occasionally, until they have turned are a deep golden brown - about 25 minutes. Stir in the cumin and cayenne and cook an additional minute to allow the spices to become fragrant.

Combine the potatoes and onions in a large, pre-warmed bowl. Sprinkle with lime juice and toss to coat and serve.
