  Quick Pasta with Vegetarian Sausage

Another creation from darling daughter, this recipe goes together quickly and is full of bright, bold flavors.  The use of vegetarian Italian sausage link, which can now be found in most good supermarkets, makes this dish vegetarian friendly plus it's very diet friendly. This makes about two servings.

1 tablespoon    olive oil
4 whole    vegetarian Italian sausage links, chopped
1 tablespoon    crushed red pepper (more or less according to desired spiciness)
2 tablespoons    dried basil
2 medium size    ripe tomatoes, diced
3 cloves    garlic, minced
    salt, black pepper and Parmesan to taste
    pasta of your choice for two

Cook the pasta al dente and set aside.  Heat wok or sauté pan over medium heat.  Swirl in the oil to coat, add garlic and sauté until golden, about one minute.  Add sausage and red pepper and cook until browned.  Add the tomatoes and basil and cook until heated through, another 30 seconds or so.

Add salt, pepper, Parmesan and pasta and toss well before serving.
