Quesadilla Big Daddy

Based on Tortilla Stackup recipe I got from the Magee’s I created this delicious treat. It’s easy to prepare and everyone seems to love it – especially the kids. These are so filling that they can serve as the main event or sliced into eighths and served as appetizers. They come out of the oven warm and crunchy but cool quickly so have everyone ready to woof ‘em right away.

10 whole flour tortillas (8" size)
8 ounce Mild cheddar or jack cheese (shredded)
½ cup Feta cheese, crumbled
2 large ripe tomatoes, thinly sliced (about 12 slices)
1/8 pound smoked turkey breast (thinly sliced)
4 strips bacon, cooked crisp and crumbled
2 tablespoons butter, melted

 Preheat oven to 400 degrees. Grease 2 8" cake pans. Layer into each:

  • 1 tortilla
  • ¼ of the shredded cheese
  • 3 slices of tomato
  • 1 tortilla
  • ½ the smoked turkey breast
  • 1 tortilla
  • ½ the crumbled bacon
  • ½ the crumbled Feta
  • 1 tortilla
  • ¼ of the shredded cheese
  • 3 slices of tomato
  • 1 tortilla

Brush the top tortilla with ½ of the melted butter and bake for 20 minutes. Slide onto cutting board and quarter. Serve immediately with sour cream, salsa, diced scallions or any of your favorite garnishes.

Move quickly out of the way.
