Pasta Dump Dinner

This is one of those dishes that come along every now and then with which you just fall in love.  It's called a dump because that's just what it is, a bunch of stuff dumped into a baking dish,  No mess is made,  You bake it in the same pan that it's mixed in. It's very lasagna-like, the kids love it and clean up is a breeze.  Complements of Food Network.

1-24 ounce jar marinara sauce (see notes)
3 cups beef broth
¼  cup tomato paste
4 cloves garlic, minced or grated
1 pound piece pasta such as penne or rigatoni
1 pound Italian sausage, hot or mild (your preference) (see notes)
1 cup ricotta
2 cups shredded mozzarella
cooking spray  
½ teaspoon each salt and pepper

Preheat the oven to 425o.  Grease the bottom and sides of a 13x14 inch baking pan with butter or cooking spray

Stir together to marinara, beef broth, tomato paste, S&P and garlic in a medium bowl,

Spread half the uncooked pasta, distributed evenly, into the bottom of the baking dish.  Break up the sausage and spread small pieces over the pasta.  Dollop with half of the ricotta.  Pour half of the sauce mixture over the top.  Repeat for a second layer.

Cover with aluminum foil and bake until the pasta is al dente, about 50 minutes.  Remove the foil and spread the mozzarella over the top and bake until the cheese is melted and bubbly, about 10 minutes.  Allow the dish to cool for 15 to 20 minutes before serving.

Notes:

  1. Substitute your own home made if you wish.
  2. You may either breakup whole sausages after the casing is removed, or purchase preground sausage from the store.
