Orange-Chile Noodles

This recipe is simple, quickly prepared and absolutely delicious.  It's already become a family favorite.  It will go very well with seafood or pork, especially with sautéed shrimp or pan seared scallops served on top.  The recipe is based on one by Caprial Pence as demonstrated on Sara's Secrets, a Food Network television show.

12 ounces   dried Chinese egg noodles or linguini
½ cup   vegetable oil
1 teaspoon   sesame oil
3 cloves   garlic, minced
1 tablespoon   fresh ginger, minced
1 orange   zested and juiced
1 tablespoon   orange marmalade
¼ cup   soy sauce
1 tablespoon   Sambal Olek (or other oriental hot chile sauce)
1 bunch   scallions (green parts only), for garnish, optional
1 medium lime, juiced

In a stockpot over high heat, bring about 8 cups of water to a boil. Add the noodles and cook until al dente (see note below).  Drain well and place in large, warm bowl. Set aside.

While waiting for the water to boil, whisk together all remaining ingredients except the scallions and lime juice.

When the noodles are ready pour the dressing over the noodles and toss well. Let sit at least 10 minutes before serving, tossing occasionally.

Sprinkle with the lime juice and toss once more.  This really brightens up the flavors.

Garnish with chopped scallions, if using.

Note:

If using oriental noodles the cooking times are often quite a bit less than regular dried pasta so follow the package directions.  It is important not to overcook the noodles because the noodles need to absorb the sauce before serving.
