Ooey Gooey Chocolate Deliciousness

You sometimes come across recipes in places you wouldn't have thought to look - and they end up knocking your socks off.  Such is the case here.  From the side of an old Hershey's cocoa container that I browsed one day while awaiting to add the cocoa to something entirely different.  By any name these jewels would be major show stoppers, but I think my name says it all :-)

3 cups quick oats (oatmeal)
2 cups sugar
1 stick unsalted butter
2/3 cup peanut butter (creamy or chunky)
1/3 cup cocoa powder (see notes)
½ cup whole milk
2 teaspoons vanilla extract
½ cup chopped nuts (optional)

Melt butter and milk in saucepan large enough for all.  Add sugar and cocoa and bring to a boil stirring constantly.  Add vanilla and stir in then remove from heat and add peanut butter - stir until melted and blended in.  Add oats and fold in until completely integrated

Drop heaping teaspoons on cookie sheet (see notes) covered with wax paper - allow to cool.  Unbelievable!

Notes:

  1. I use Hershey's but any brand should work just fine as long as it is 100% unsweetened cocoa.
  2. Work quickly when the mix comes off the heat as the mix will start to set up fast.
