No Egg Eggnog

Plucked this off the web one day after seeing "Mr. Food" prepare this on a television show. It sounded delicious – and it is! I made it the following Christmas season and everyone loved it.

6 Cups whole milk
1 pkg instant vanilla pudding and pie filling (4 serving size)
4 teaspoons rum extract
¾ teaspoons ground nutmeg
2 Cips heavy cream
2 Tablespoons confectioners’ sugar

white or dark rum

In a punch bowl, combine the milk and pudding mix; mix well. Add the rum extract and ½ teaspoon of the nutmeg, mix well and set aside.

In a mixing bowl, beat the cream and sugar until stiff peaks form. Add half of the whipped cream to the milk mixture stirring until well blended. Place in ‘fridge until ready to serve.

Before serving add as much rum as you wish (if it thins too much stir in some of the left over whipped cream). Dollop the remaining whipped cream over the top and sprinkle with the remaining ¼ teaspoon of nutmeg.
