Jamaican Curry Sauce

A Big Daddy original! This is superb served over grilled chicken, pork, fish or rice.

¼ teaspoon white pepper
1 tablespoon paprika
1 teaspoon dry mustard
2 tablespoons curry powder
½ teaspoon Jamaican allspice
1 whole crushed dried chile (optional)
1-15 ounce can diced tomatoes
2 tablespoons fresh lime juice
2 cups chicken broth
1 medium onion, chopped
6 cloves garlic, minced
1 medium bell pepper
2 tablespoons peanut oil
salt to taste

Sauté the pepper, garlic and onion in the peanut oil until tender. Add tomatoes, chile and spices. Simmer an additional 10 minutes, scraping the bottom of the pan frequently. Place all in a blender and puree. Return pureed mixture to saucepan and add chicken broth and lime juice. Simmer an additional 20 minutes. Thicken with corn starch mixed with water or milk.
