Grilled Veggie Kebabs

Roasting the veggies transforms their flavor in a marvelous way. Really easy.  Really delicious.  Select from the following:  use all of them, or add some other favorite to the mix.  The amount will be determined by the number of skewers you'll need, usually one skewer per diner.

- green bell pepper, cut into 1-inch pieces
- red bell pepper, cut into 1-inch pieces
- zucchini, slices 1/2 inch thick
- yellow squash, cut into 1-inch pieces
- mushrooms, cut in half if very large
- 1/2 cup bottled clear Italian salad dressing

Place all vegetables in a plastic bag set into a shallow dish. Pour Italian dressing over vegetables. Close bag. Marinate at room temperature for at least one hour, turning bag occasionally to distribute marinade.

Drain vegetables, reserving dressing. On skewers, alternately thread green pepper, red pepper, zucchini, mushrooms, and yellow squash, leaving space between pieces.

Place kabobs on the cooking grill.  Grill 10 to 12 minutes or till vegetables are tender, turning once halfway through grilling time and brushing occasionally with reserved dressing.
