Grilled Veggie Kabobs

Roasting the veggies transforms their flavor in a marvelous way. Really delicious.

green pepper, cut into 1-inch pieces
sweet red pepper, cut into 1-inch pieces
zucchini, slices 1/2 inch thick
yellow squash, cut into 1-inch pieces
Mushrooms, cut in half if very large
1/2 cup bottled clear Italian salad dressing

Use as much of the vegetables listed above as required for the number of skewers you wish to make.

Place all vegetables in a plastic bag set into a shallow dish. Pour Italian dressing over vegetables. Close bag. Marinate at room temperature for at least one hour, turning bag occasionally to distribute marinade.

Drain vegetables, reserving dressing. On skewers, alternately thread green pepper, red pepper, zucchini, mushrooms, and yellow squash, leaving space between pieces.

Place kabobs on the cooking grill.  Grill 10 to 12 minutes or till vegetables are tender, turning once halfway through grilling time and brushing occasionally with reserved dressing.
