Easy Peach Cobbler

Sometimes you just want something easy even if it's not the best you can do.  This recipe from Sarah Holden of the Food Network is ridiculously easy and pretty darn tasty as well.

5 cups sliced, ripe peaches (see notes) approximately 2 pounds
½  cup brown sugar
¼  cup granulated white sugar
2 tablespoons cornstarch
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½  teaspoon kosher salt (or ¼  teaspoon table salt)
juice of one lemon
1 15oz box white or yellow cake mix
1½ sticks unsalted butter thinly sliced

Preheat the oven to 350 degrees.  Coat the inside of a 9x13" baking dish with cooking spray.

Toss together the sliced peaches, sugar, cornstarch. cinnamon, nutmeg, salt and lemon juice in a large bowl.  Let sit for at least 15 minutes.

Transfer to the baking dish and top evenly with the cake mix.  Top the cake mix with the sliced butter and bake until the cake is golden brown and the peach filling is bubbling up around the edges, about 45 - 55 minutes.  Allow to cool before serving

Notes:

The peaches can be peeled or unpeeled.  You won't notice the difference in the final result.
