Crabmeat Au Gratin

During my last visit to the outer banks in North Carolina a good friend gave me a copy of Old Fishing Village Recipes by  J. S. Collester.  In it I found this recipe and it is truly delicious.  I have scaled it up to increase the number of servings and increased the amount of cheese but basically it is as I found it.

1 pound   fresh crabmeat, picked
1½ cups   grated muenster cheese
½ cup plus 2 tablespoons   grated Parmesan cheese
1 cup   whole milk
2 tablespoons   chopped parsley
1 teaspoon   dry mustard
1 tablespoon   Worcestershire sauce
5 tablespoons   melted butter
1/3 cup   dry white wine
2 teaspoon   salt
1 teaspoon   white pepper
¾ cup    Panko bread crumbs

Preheat the oven to 350 degrees.  Add 2 tablespoons of the melted butter and then toss with the breadcrumbs and 2 tablespoons of the Parmesan cheese until well combined and all the clumps are broken up.

Put the grated cheeses and milk and heat in a sauce pan until the cheeses have melted.  Add the remaining ingredients (except the breadcrumbs) and combine well.

Place in a casserole dish, top with the breadcrumbs and bake in a 350 degree oven for 35 minutes.
