Cajun Style Fried Rice

While this started out as a desperate attempt to clean some stuff out of the fridge and pull together a quick lunch for myself it has ended up as a quick and easy way to spice up the rice you're planning on serving for dinner.  Simply inspiration, and so tasty.

~3 cups cooked long grain rice
2 heaping tablespoons Cajun seasoning
˝  teaspoon salt
2 tablespoons bacon grease
˝  teaspoon black pepper
˝  cup (or more) diced ham or smoked sausage
1 small onion, diced
2 medium cloves garlic, minced
1 large egg, lightly beaten

Heat a medium size skillet and melt the bacon grease.  When the begins to sizzle add the onion and sauté until translucent.  Add the garlic and continue to sauté until the garlic is aromatic, about 1 minute.  Add the salt and seasonings to the pan and mix into the onion mixture.  And the rice and sauté, folding in the onion mixture, until  is beginning to brown, about five minutes.  During this time you should be stirring frequently to prevent the mixture from burning.

Fold in the ham and continuing to sauté until the ham is heated and well combined with the rice.  Add the egg into the rice mixture and stir to combine and cook the egg, about one minute.  Adjust for S&P and serve.
