Blueberry Crisp

This is simple and awesome. Serve alone or with ice cream.  The kids lust after this stuff.

6 cups fresh, or frozen, blueberries
4 tablespoons instant tapioca
1 tablespoon lemon juice
Topping
1 cup oatmeal
cup flour
1 teaspoon cinnamon
teaspoon salt
cup margarine, melted
⅔ cup light brown sugar
⅓ cup white sugar

 

Preheat oven to 325. 

Combine the washed berries, tapioca and lemon juice in a mixing bowl. Stir well and allow to sit for at least 15 minutes. In a separate bowl combine the remaining ingredients. 

Spread the berries into an 8"x8" baking dish.  Smooth the topping  on top of the berries covering it completely.

Place the baking dish onto a larger baking pan in case the mixture bubbles over.  Bake for 45 minutes or until the edges are bubbly and the topping is browning.
