Black Bean Dip

Quick and easy to make, but delicious with white corn tortilla chips.

1 16 ounce can black beans, drained
½ cup your favorite thick and chunky salsa
1 tablespoon lime juice
1 clove garlic, crushed
¼ cup chopped scallions

 

Reserve ½ cup beans. In blender, blend remaining beans, salsa, lemon juice and garlic until smooth. Stir in scallions and remaining beans. Chill one hour to blend flavors. Optionally, garnish with additional scallions.
