Apple Pie with Sour Cream Topping The slight tartness of the sour cream contrasts with the sweetness of the sugar and apples to make this a real delight.
Mix all ingredients (except sour cream and brown sugar) and toss with the apples. In a large saucepan heat the apple mixture over moderate heat. As the apples warm they will release moisture and cook down. Cook the mixture for about 5 minutes and then add the cornstarch slurry. Continue cooking, stirring constantly, for an additional 2 minutes. Arrange in unbaked 9-inch pie shell. Cover loosely with foil and bake in hot oven (400 degrees) for 50 minutes. Remove foil. Combine sour cream and brown sugar and pour evenly over apples. Bake an additional 2-3 minutes longer. Set aside to cool (it needs to cool thoroughly in order to set up properly.) |
