- 1 Tablespoon vegetable oil
- 1 onion -- chopped
- 3 cloves garlic -- minced
- 2 red bell pepper -- finely diced
- 1 1/2 pounds ground turkey -- breast, coarse grind
- 2 Tablespoons flour
- 3 Tablespoons chili powder
- 2 Tablespoons ground cumin
- 2 teaspoons cocoa powder
- 1 teaspoon cayenne pepper
- 1/4 cup tarragon vinegar
- 2 Tablespoons brewed coffee -- strong
- 28 ounces plum tomato, crushed
- 1/4 teaspoon salt
- 2 cups cooked black beans
Heat the oil over medium-high heat in a Dutch oven or deep skillet. Add the onion,
garlic,and bell peppers; saute, stirring frequently, for 5 minutes. Add the ground turkey
and saute for 5 minutes, stirring constantly and breaking up any lumps with the spoon.
Sitr in the flour, chili powder, cumin, and cocoa. Stir over low heat, stirring
frequently, for 3 minutes to cook the spices. add the remaining ingredients except the
black beans and bring to a boil over medium heat. Simmer the chili, stirring occasionally
for 40-45 minutes, until thick and the turkey is tender. Add the black beans and cook for
5 additional minutes.

456 mg sodium. Freezes well. I like to add another 2 cups of beans, this adds
about 60 calories per serving. Serve with chopped cilantro, lime wedges, and lofat
sour cream or yogurt.
