Title: Portabello Mushroom Salad

  Balsamic Vinaigrette
  • 1 cup balsamic vinegar
  • 1 cup rice wine vinegar
  • 1 cup blended oil
  • 2 ounces chopped garlic
  • 2 ounces fresh chopped basil
  • 3 ounces honey
  • 3 ounces dark brown sugar
  • salt & pepper to taste

Whisk all ingredients together.

Roasted Garlic Dressing

  • 8 ounces mayonnaise
  • 2 cloves roasted garlic
  • 1 ounces Worcestershire
  • 5 ounces sour cream
  • 5 ounces buttermilk
  • 2 ounces rice wine vinegar

Whisk all ingredients together.

Lay out a bed of baby greens on salad plate.  Place diced tomatoes on one side, julienned red onions on other and sliced, grilled portabellos on top.  Drizzle balsamic vinaigrette over portabellos and roasted garlic dressing over vinaigrette.   Top with crumbled gorgonzola.
