Title: Bok Choy Salad

Crunchy Bits

  • 2 packages ramen noodles (w/out seasonings)
  • 5½ oz of sliced almonds
  • ½ cup butter

Chop

  • 1 large head bok choy
  • small bunch of scallions
  • 1-2 cups bean sprouts (mung)

Dressing

  • ½ cup vegetable oil
  • ½ cup sugar
  • ¼ cup white vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame seeds

 

Brown almonds in ½ cup (less works fine) of butter and add crumbled noodles. Continue to brown. Just before serving mix veggies and dressing together with the noodles and almonds:
