Dry Sea Scallops

When selecting scallops make sure that you purchase "dry" scallops.  Many distributors infuse the scallops with water in order to increase the weight.  Besides being a rip-off to the unsuspecting buyer, they don't cook as well either.  The "wet" scallops will render their water when cooked making it difficult to sear them properly.  By law retailers must display "wet" scallops as such.  If you're uncertain, make sure and ask for dry scallops specifically.  They cost more but are far superior.
