Clarified Butter Also referred to as drawn butter or, in Indian cooking, Ghee. Clarified butter is made using unsalted butter. The butter is melted very slowly allowing the water to evaporate in the process. During this time the butter will separate with the solids sinking to the bottom of the of the pan while the liquid floats on top. The liquid is slowly poured into a separate container, any remaining foam is skimmed off and the clear butter is then used in cooking, or as a condiment with lobster, steamed clams, etc. Clarified butter has a higher smoke point than regular butter making it ideal for cooking at high temperatures.
